Erdäpfellaibchen - potato loaves
Ingredients (4 people)
1 kg potatoes
1 Braunschweig Sausage or 500 g of Krakow Sausage
1 onion
2 eggs
1 clove of garlic
salt, pepper, tarragon, some paprika powder

What Austrian Erdäpfellaibchen are
Erdäpfellaibchen are another meal typical for the West of Austria, based on potatoes and fairly heavy. Like most of these course, hefty meals, the flavour is plain but intense and goes very well with dark white beers and sauerkraut. It is fairly easy and quick to prepare.
How to prepare Erdäpfellaibchen
Boil potatoes and mash them. Chop the sausage and onion, cut the garlic and mix all ingredients to a dough. Form little loaves of the size and shape of hamburgers. Fry them in hot oil on both sides until golden. Serve hot with sauerkraut.
