Austrian Snacks: Obatzter Bread Spread
Ingredients
250 g of very mature camembert
50 g butter
2 tablespoons of lager beer
½ an onion
1 teaspoon of red paprika powder
1 teaspoon of caraway
salt, pepper
1 bouquet of chives
What Obatzter is
Obatzter is a classic bread spread that comes in several variations in Southern Germany and Austria. Traditionally, it was a way to get rid of leftover cheese. Its slightly bitter and very intense taste works very well on white breads and bread rolls. It is also very straight-forward and easy to make.
How to prepare Obatzter
Cut the camembert into some pieces (unless already liquid) and chop onion finely. Mix all ingredients to a spread and chop the chives to add it onto it. Serve it slightly chilled in a bowl.
