Austrian Snacks: Liptauer cheese bread spread
Ingredients
250 g quark
100 g butter
3 gherkins
1 small onion
1 tablespoon of capers
2 tablespoons of red paprika powder
1 teaspoon of caraway
salt, pepper
What Liptauer Cheese is
Liptauer is a cream cheese based bread spread that is very common in Austria. It is a rare incident of a vegetarian meal on my list of Austrian recipes. It works very well as a snack on dark bread or in white bread rolls (Semmeln). A light, acidic white wine in a white spritzer makes a perfect Austrian snack for a warm summer evening. How to make Liptauer
Cut the gherkins and onion into very little pieces. If very big, cut the capers. To make your life easier, melt the butter in the microwave or use a blender for mixing it with all other ingredients. Make a smooth spread. In the end, it should have a light, orange colour from the paprika.
